Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 2 ripe avocados
  • 1 large cucumber
  • 2 cloves garlic minced

  • 1/2 tsp cayenne pepper optional for heat
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Instructions
 

Prepare the Shrimp:

  • In a bowl, combine shrimp, minced garlic, 1 tbsp cilantro, paprika, cayenne pepper (if using), salt, and black pepper.
  • Drizzle with 1 tbsp olive oil and toss until the shrimp are evenly coated.

Cook the Shrimp:

  • Heat the remaining olive oil in a skillet over medium-high heat.
  • Add the shrimp and cook for about 2 minutes on each side, or until they turn pink and are slightly charred. Avoid overcrowding the pan.
  • Remove from heat and set aside.

Prepare the Avocado Spread:

  • In a bowl, mash the avocados.
  • Add lime juice and salt, mixing until you achieve a smooth consistency.

Assemble the Appetizers:

  • Slice the cucumber into round slices, about 1/4 inch thick.
  • Spread a layer of the avocado mixture on each cucumber slice.
  • Place a cooked shrimp on top of each avocado-covered cucumber.
  • Garnish with additional cilantro and a squeeze of lime juice.
