Ingredients
  

  • 1 lb Italian sausage ground
  • 2 cups cheese-filled tortellini
  • 1 cup heavy cream
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 4 cups chicken or vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional: 2 cups fresh spinach or kale red pepper flakes for heat, grated Parmesan for garnish

Instructions
 

  • Prepare Ingredients: Dice onions, carrots, and celery. Mince garlic. If using, wash and chop spinach or kale.
  • Cook Sausage: In a large pot, heat a bit of olive oil over medium heat. Add the ground Italian sausage, breaking it apart with a spoon. Cook until browned.
  • Sauté Vegetables: Add onions, carrots, and celery to the pot. Sauté until tender, about 5 minutes. Add garlic and cook for another minute.
  • Add Broth: Pour in the chicken or vegetable broth. Bring to a boil, then reduce heat to simmer.
  • Add Tortellini: Put in the tortellini and cook according to package instructions, usually 7-10 minutes.
  • Add Cream: Lower the heat. Stir in heavy cream, basil, and oregano. Season with salt and pepper. Add spinach or kale if using, and cook until wilted.
  • Adjust Consistency: For a thicker soup, simmer for a few more minutes. If too thick, add more broth.
